Fresh Grilled Corn Salad

There is nothing like fresh New Jersey Corn!  Sometimes you don't even need the butter when you get a good batch!  

There are lots of ways to cook fresh corn.  You can grill it, steam it, saute it or just plain old boiling it.  To boil fresh corn, remove outer leaves and silk (fun for the kids to do).  Put into a big pot of cold water; when the water comes to a boil - it's done!  All you need is some butter, salt and pepper and you have the best summer side dish.

Here's a recipe for grilled corn:  
  • 5 large ears corn, husked
  • 2 medium tomatoes, chopped
  • 1 small orange or red bell pepper
  • 1 medium onion, slice in 1" thick slices
  • 2 Tbsp. fresh basil, shredded
  • 2 Tbsp. red wine vinegar
  • 2 Tbsp. olive oil
  • Salt and freshly ground black pepper
Prepare corn, onions and bell pepper by brushing lightly with olive oil and salt and pepper.  To make grilling onions easier, thread onto bamboo skewers.

Grill corn, pepper and onions turning to cook all sides until some of the kernels are slightly charred, about 8-10 minutes.  Let stand until cool enough to handle.

Remove kernels from the cobs.  Remove onion from skewers and chop roughly.  Combine corn, tomatoes, pepper and onions in a medium bowl.  Stir in basil, oil and vinegar and salt and plenty of freshly ground black pepper (to taste, but I found this salad to be on the sweet side and I like lots of pepper!)

Patti you are probably right since I havent had corn from your area that its the best, but I think Upstate NY is a close second, I totally missed this two tone corn, I really love all white shoecorn the best, now you have totally made me homesice until I think of the snow, then I stay put.. I will be looking for Florida Corn to have third best and try this out for sure!

  5. I kid you not when I say that this is one of my favorite ways to eat in the summertime. Charring up some fresh veggies perfectly, chopping, and tossing them together. You can't beat the flavor that grilling anything imparts. This sounds amazing!

  8. Patti, I've never had Jersey corn, but you sure make me believe it can outshine Iowa corn. Either way, no matter what, summer isn't summer without a cob of corn messing up my face and yea, I drizzle hot butter on that makes my face even messier!     Congrats on being featured on Miz Helen's Full plate Thursday.

    Here in Michigan, the saying goes "knee high by the 4th of July". That's how tall a good crop of corn should be by then. So... our local corn is far from the picking and eating stage yet.

    But that does not mean that we don't go tot he local store and pick up some that's been grown elsewhere. GOTTA have corn on the cob all summer long!

    Your salad is a double winner - after reading through the ingredients, I know the flavors are going to blend together deliciously. AND the colors make it very eye appealing ;->
