Mediterranean Winter ChickPea Pasta Salad

Everyone enjoys a good pasta salad during the summer months when veggies are at their peak.  During the winter, tomatoes, especially, suffer from lack of taste, texture and flavor.  This is a delicious, warm pasta salad made with chickpea pasta!  If you love pasta (and who doesn't) but are trying to watch your carbs or just want to start eating healthy for the new year, this is a great recipe.  High in protein and fiber, this is a nice additional to your pantry on a night that you just need a pasta fix!  The folks at Banza sent in their "Banza Boys" to the local ShopRite to give everyone a sample of their pasta. 
Banza is a small team based in Detroit with a big goal:  To change food for the better!  By making pasta from chickpeas instead of wheat, they have discovered that pasta can be as healthy as it is delicious!



Mediterranean Winter Pasta Salad

1 8 oz. box Banza Shells
1 5 oz. clamshell Organic Baby Spinach
2/3 cup marinated artichoke hearts, roughly chopped
1/2 small red onion, chopped
1 red roasted pepper, drained and chopped
6 sun-dried tomatoes, coarsely chopped
1/2 cup marinated kalamata olives halved
1 plump clove of garlic, minced
1/4 cup liquid from marinated artichoke hearts
1/4 cup extra virgin olive oil
1/4 cup red wine vinegar
1/2 tsp. dried oregano
1/2 cup feta cheese crumbles
Salt and Pepper to taste

Directions:

Bring 6 inches of water to a boil in a large pot.  Salt boiling water and add pasta.  Cook according to package directions or until desired tenderness.  While pasta is cooking, roughly chop baby spinach.  Add spinach into colander where you will drain your pasta.  When pasta is cooked, drain directly over spinach to wilt slightly.  Transfer warm spinach and pasta to a large bowl.  Add artichoke hearts, onion, roasted red pepper, sun-dried tomatoes and olives and mix to combine.

In a one cup measure, combine marinade liquid, olive oil, red wine vinegar, oregano and salt and pepper to taste.  Combine with pasta mixture.  Serve warm with feta cheese crumbles.

Pineapple-Banana Burst Smoothie #DoleRose

This Dole-icious smoothie captures paradise and the crisp winter holidays in one glass, with a flavor profile that includes Dole® Pineapple Juice, frozen Dole® Pineapple Chunks, cinnamon and nutmeg. What a great way to celebrate the Dole Packaged Foods participation in the first  "Live on Green" event in Downtown Pasadena, December 29-31, and its annual tradition of participating in the Tournament of Roses Parade—this year’s float will feature a zip line, with a rider “Soaring Over Paradise” nearly 100 times!

At “Live on Green,” Angelenos and visitors from around the world will explore 100,000 square feet of free entertainment, unique and rare exhibitions, and fun activities, as well as indulge in healthy snacks and beverages at the Dole Bistro. Dole California Cook-Off Champion Ally Phillips of Ally’s Kitchen will perform live cooking demonstrations and share quick and fun recipes featuring Dole Packaged Foods’ products. 


INGREDIENTS:

1 cup Dole Pineapple Juice
1-1/2 cup Dole Frozen Pineapple Chunks (partially thawed)
1 Dole Banana
1/2 cup vanilla yogurt
Pinch of cinnamon and nutmeg

Blend all ingredients until smooth.
Garnish with banana sliced dipped in 
organic cane sugar and a chunk of frosty pineapple with a sprinkle of nutmeg.

Pineapple Upside Down Minis #dolerose

The idea of cooking a cake upside down, is an old technique that started centuries ago when cakes were cooked in cast iron skillets.  The idea of the pineapple came soon after 1911 when one of the James Dole's engineers had invented a machine to cut his pineapple into nice rings.  Soon the convenient and pretty rings were used in this age old technique of the skillet cake.
It's time to bring back this classic dessert - in mini form!
Perfect size for snacking or on your holiday table.



This holiday season, Dole Packaged Foods, LLC will be part of the annual Tournament of Roses Parade.  Dole Packaged Food's float, "Soaring Over Paradise" explores the world's rain forests.  The float includes four waterfalls, a zip line that travels through the rain forest canopy and a flock of Macaws that appear to take flight over the floral gardens.  Featured thoughout the float are Dole's non-GMO fruits, including bananas, pineapples, strawberries and mangoes.  It's a celebration more than a century old - a festival of flowers, music and sports unequaled anywhere else in the world.  It's America's New Year Celebration!   

Dole Packaged Foods ‘Live on Green’ Food Blogger Blast Party 2016 Rose Parade

We are so excited to be part of the food blogger blast!  Alice Phillips of What's for Dinner - Ally's Kitchen will demonstrate this recipe and several others at the Dole Bistro where she'll be cooking "live on green" December 29 and 30th as part of the parade.  Dole recipes are easy there are so many delicious ideas for the holidays or anytime.

Ingredients

2 cans (20 oz. each) Dole Pineapple Slices
1/3 cup butter or margarine, melted
2/3 cup packed brown sugar
1 package (18.25 oz.) yellow or pineapple flavored cake mix
Maraschino cherries

Directions

Drain pineapple; reserve juice
Stir together melted butter and brown sugar.
Evenly divide sugar mixture into 18 muffin cups.
Press well drained pineapple into sugar mixture.  Place cherries in center of pineapple.
Prepare cake mix according to package directions, replacing water with reserved pineapple juice.
Pour 1/3 cup batter into each muffin cup.
Bake at 350 degrees F. for 20-25 minutes or until toothpick inserted in center comes out clean.
Cool 5 minutes (Important!)
Invert onto cooling rack.
Drizzle with any left over brown sugar syrup left in muffin tins.

Breakfast Burrito #backtoschoolbreakfast

One of the most common symbols in the lives of all moms is the need to feed our families.  Packaged foods and take-out are ruining our health and it's hard to fight to keep your kids from turning to those quick microwave meals when you don't have the time to prepare something.  Weeknight dinners are one thing - then there are lunches and most important - breakfast. 

  This is a simple mom/family friendly recipe that can be make in advance.  When your kids help prepare something, they are more likely to try it.  Kids can crack the eggs and stir them up for you.  It's a great cooking lesson! Don't hesitate to come up with your own combinations to best suit your family's taste.  When the mornings are hectic - pop a freshly made Breakfast Burrito into the microwave and feel good about feeding your family something fresh and nourishing.



BREAKFAST BURRITO

2 tsp. canola oil
1 12 oz. package @Johnsonville Breakfast Sausage
1 cup frozen hash browns with peppers and onions
8 large eggs
Cheddar Cheese
Salt and Pepper
4 taco size flour torilllas

Heat oil in a large non-stick skillet over medium heat.  Add sausage links.  Cook for 12-16 minutes or until cooked through and browned, turning often.

Remove to a paper towel-lined plate.  Add the hash browns to the skillet and cook, stirring occasionally, until the potatoes are golden brown and crisp, about 8-10 minutes.

Beat the eggs in a medium bowl until frothy.  Sprinkle with salt and pepper and a few dashes of hot sauce (optional).  Pour the eggs over the potatoes and cook, stirring until the eggs are fluffy and just set.  Remove from the skillet and keep warm.

Wipe out the skillet and return it to the heat.  Warm the torillas one at a time in the skillet.  Build the burrito by layering the egg mixture, sausage and a sprinkle of cheese.  Fold up the two sides and roll up tightly.




TO FREEZE:

Wrap burrito in paper towel and then in foil.  Freeze in zip-top bag, label and freeze.

TO REHEAT:

Remove foil.  Place burrito with paper towel on a microwave safe plate and heat on HIGH for 1 to 1-1/2 minutes, or until heated through.

Makes 4 Breakfast Burritos
Prep Time:  5 minutes
Cook Time:  25 minutes

Raspberry preserves
Sliced almonds

Directions

With a hand mixer or stand mixer, whip heavy cream with sugar and vanilla until thick and creamy.  In a medium bowl, add chocolate pudding and 1/3 of the whipped cream and whisk to lighten the mixture.  Set 1/4 of the whipped cream aside for garnish.  Fold in remaining whipped cream until combined.

Spoon into dessert cups, a layer of raspberry preserves and remaining mousse to fill cup.  Garnish with whipped cream and sliced almonds.

You could even put this mousse into fancy glasses - it's that good!

Goat Cheese, Honey & Fruit Appetizer

Ingredients:

2 Tbsp. honey
1 tsp. balsamic vinegar

1/4 tsp. salt

Toasted Almonds (optional)

Directions:

Combine all ingredients except cheese in a saucepan and heat gently until heated through and fruit has plumped.

Pour over the cheese and serve with flatbread or crackers.

Meatloaf Gyros #MadeWithChiobani

Greek yogurt is packed with protein and probiotics that aid digestion and keep you feeling full.  Tzatziki is a perfect condiment for snacks and wraps.  For the #MadeWithChiobani Project, I made a delicious Greek Tzatziki sauce to use on my Meatloaf Gyro.  Who knew leftover meatloaf could taste so good!

Leftover meatloaf
Sliced tomatoes
Sliced sweet onions
Flatbread or Pita

#MadeWithChiobani Tzatziki Sauce

1 cup Chiobani Greek Yogurt
1 cup shredded cucumber
2 cloves garlic, minced
2 tsp. fresh lemon juice
1 tsp. fresh dill or mint (optional)
Salt and freshly ground black pepper to taste

For sauce:  In a small bowl, combine the yogurt, cucumber, garlic, lemon juice salt and pepper.  
Cover and refrigerate until serving.



Warm flatbread or pita on a lightly greased griddle for one minutes on each side.  Keep warm.  Cut meat loaf into very thin slices.  In a large skillet, fry meat loaf in 1 Tbsp. unsalted butter in batches until warmed through and crisp.

On each pita bread, layer the tomato, onion and meatloaf slices.  Top with tzatziki sauce.  Fold pitas in half.  Serve with remaining sauce.

Shells Alfredo with Caramelized Onions #Boursin

Who would not bow down to butter, cream and cheese!  Alfredo di Lelio, after whom this dish was named was a restauranteur in Rome in the early 1900's.  Mary Pickford and Douglas Fairbanks, on honeymoon in Rome, dined on this dish every night at Alfredo's restaurant.  

Once you try this recipe, you will never buy pre-made Alfredo sauce again.  This version is a little lighter, but still  totally decadent and off the charts delicious and #Boursin makes it easy!  #Boursin Garlic & Fine Herbs has the perfect, mouthwatering recipe in a creamy blend of real cheese, savory herbs with just the right amount of garlic.  You can use traditional fettucine or any pasta.  I chose shells to trap all that delicious sauce!
Ingredients:

3/4 lb. medium shell macaroni
4 Tbsp. unsalted butter
1/2 large onion, sliced thin
1 5.2 oz. #Boursin Garlic & Fine Herbs
1-1/2 cup low-sodium chicken broth
1 cup frozen peas (optional)
1/2 cup freshly grated Parmesan cheese
Salt and Freshly ground black pepper to taste

Directions:

In a medium saucepan, melt better over medium-high heat.  Add sliced onions and saute until golden brown, stirring frequently, about 10 minutes.

Bring 4 quarts of lightly salted water to a boil and add macaroni.  Cook until al dente, according to package directions.  Drain.

Remove onions from saute pan using a slotted spoon, set aside.  Add 1 Tbsp. unsalted butter to same saute pan.  Reduce heat to medium.  When butter has melted, add #Boursin Garlic & Fine Herbs and low-sodium chicken broth.  Whisk to combine.  Bring to a gently bubble and add peas (if using).  Simmer 5 minutes.  Add cooked macaroni to pan and simmer an additional 5 minutes.  Remove from heat and stir in Parmesan cheese.  Add salt and pepper to taste.  Sauce will thicken upon standing.  
Top with crispy fried onions and enjoy!
Prep Time: 5 minutes
Cook Time:  30 minutes
Servings: 4

Salted Caramel Brownie Brittle with Nestle Toll House DelightFulls

I added walnuts and a sprinkling of coarse sea salt.
Ingredients

1/2 cup all-purpose flour
1/4 tsp. salt
1/4 tsp. baking powder
2 large egg whites
1 cup sugar
2 Tbsp. cocoa powder
1/2 tsp. espresso powder
1/4 cup canola oil
1/2 tsp. vanilla
1 Tbsp. dry milk powder
1/3 cup Nestle Toll House Milk Chocolate Morsels with Caramel Filling
1/2 cup chopped walnuts
Coarse sea salt (optional)
Preheat oven to 325 degrees F.  Line a jelly roll pan or baking sheet with parchment paper.
Whisk together the flour, salt and baking powder and set aside.
In a medium bowl, whisk egg whites until frothy.
Add the sugar, cocoa powder, espresso powder, oil and vanilla and whisk until smooth.
Whisk in the milk powder and flour and beat until smooth.
Stir in chocolate chips.
Spread the batter on the parchment paper using a spoon or spatula to spread it as thin as possible.
Sprinkle with walnuts and sea salt.
Bake the brittle for 20 minutes.  Remove from the oven and cut into squares using a pizza wheel or knife. 
 Do not separate the squares.  Return the pan to the oven and bake for an additional 5 minutes.  Remove from the oven and let cool in the pan.  When the brittle is cool, break into pieces.

Chicken Tortilla Soup + #Healthy Solutions Spice Blends Giveaway!

I used the Authentic Chili/Tacos Spice Blend for my Chicken Tortilla Soup.  I have made several recipes using this blend since my family loves Mexican Food!  It's not overly spicy and gives any Mexican dish a great flavor.
Ingredients:

3 dried guajillo chiles, stemmed and seeded
2 large ripe tomatoes
1 clove garlic
2 boneless, skinless chicken breasts, cooked and shredded
2 Tbsp. Healthy Solutions Authentic Chili/Tacos Spice Blend
1 Tbsp. canola oil (plus 4 Tbsp. for frying tortilla strips)
1 cup onion, chopped
6 cups low sodium chicken stock
1 can low-sodium cream of chicken soup
1 cup half & half
1 10 oz. package frozen corn
1 small can chopped green chilies
1 can pinto beans, drained and rinsed
3 corn tortillas, divided

For Garnish:
1 ripe avocado, cubed or sliced
Fresh cilantro
Shredded Cheddar or Monterey Jack cheese
Fried tortilla strips

Directions:
Heat oven to 375 degrees.  Sprinkle chicken breasts with about 1 Tbsp. of Authentic Chili/Tacos Blend and a drizzle of olive oil.  Bake for 20 to 25 minutes or until cooked through.  Prepare soup base.

Set a skillet over medium heat.  Once it is hot, toast the chiles for about a minute per side.  In a medium saucepan, place the toasted guajillos, tomatoes and garlic clove and cover with water.  Place over medium high heat and bring to a boil.  Reduce heat and simmer until tomatoes are cooked and mushy and the guajillos have rehydrated and plumped up, about 15 minutes.

Place the guajillos, tomatoes, garlic, onion and 1 Tablespoon Authentic Chili/Tacos Blend, along with the simmering liquid.  Puree until completely smooth.  
In a soup pot, heat 2 Tbsp. canola oil over medium high heat. Once hot, pout in the tomato puree.  Cook until slightly thickened and puree turns a deep red, about 10 minutes, stirring occasionally.

Add chicken stock, cream of chicken soup, half and half, corn, green chilies and beans.  Bring to a simmer.  Tear up one corn tortilla and add to soup.  Simmer to blend flavor, about 30 minutes.  Stir in shredded chicken.

For Tortilla Crisps:

Heat 4 Tbsp. oil in a small skillet.  Stack two corn tortillas and cut into thin strips.  Fry in hot oil until lightly brown and crisp, about 2 minutes.  Place on paper-towel lined plate and sprinkle lightly with salt and Authentic Chili/Tacos Blend

Garnish with chopped fresh cilantro, cheese of your choice and fresh avocado cubes or sliced.  Add a handful of tortilla strips.

Makes about 2 quarts.  Fry additional tortilla strips to garnish.

Creamy Broccoli & Cheese Casserole #TeamAnnies

A lot of folks are trying to go Organic today.  I've come up with a delicious recipe for a Creamy Broccoli & Cheese Casserole that is sure to become a favorite for everyday meals or Holiday dinners!




1 lb. fresh broccoli florets
1 can Healthy Request Cream of Mushroom Soup
1 large egg, beaten
1/2 cup Olive Oil Mayonnaise
1 Tbsp. minced onion
1 cup sharp Cheddar Cheese, grated
1 cup Annie's Cheddar Squares, crushed

Place broccoli in a medium bowl with 1/4 cup water.  Cover with plastic wrap and cook 4 minutes in your microwave until broccoli is tender-crisp.

Combine soup, egg, mayonnaise, onion and cheese.  Mix until well combined.  Add to broccoli and stir until evenly mixed.  Top with crushed Cheddar Squares.  Bake at 400 degrees F. for 20 to 22 minutes until bubbly and crumbs are light golden brown.
