Lemon Basil Hummus Dip

We are going through a hummus phase here.  Have to have it at every get-together.  The store brands are great!  This is a quick, simple dip you can whip up in about 10 minutes.

Ingredients:
  • 1 can (15 ounces) chickpeas (garbanzo beans)
  • 1/2 cup loosely packed fresh basil leaves
  • 1 clove garlic, peeled
  • 1 Tbsp. fresh lemon juice
  • 1 Tbsp olive oil
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • Pretzel Crisps, pita chips or crudite
Directions:
  1. Drain the chickpeas, reserving 1 Tablespoon liquid.  Rinse the chickpeas with cold water and drain well.
  2. Place the chickpeas, reserved liquid, basil, garlic, lemon juice, oil, salt and pepper into a food processor.  Cover and process until the mixture is smooth.

  1. Great additions to such a simple spread. I adore lemony hummus too, so I bet the basil tastes great.
